Produced exclusively with Peranzana, a cold-extracted monovarietal variety, it stands out for its superior quality. The smoking process is finely calibrated and uses traditional techniques, rigorously monitored according to very high quality standards, thus guaranteeing an exceptional product.

Arso is the extra virgin olive oil smoked with beech wood. A unique product, which comes from our cold-pressed Monovarietal of Peranzana. A product with pleasant and enveloping aromatic scents that gives dishes new flavors and is ideal for use raw on all types of meat and fish, salad dressings and the preparation of sauces, as well as on cheeses and vegetables.
The Art of Smoked Olive Oil
With the help of master smokers, we have studied a recipe that preserves the identity of the oil, giving aromas of apple and almond with caramelized notes. This smoked extra virgin olive oil offers pleasant and enveloping aromatic scents, ideal for use raw on all types of meat and fish, salad dressings and the preparation of sauces, as well as on cheeses and vegetables.
For the smoking of Arso we only use ecological woods, coming from sustainable forests and non-genetically modified trees. It is therefore a 100% natural process, in which craftsmanship is present in all its phases. Furthermore, to preserve the initial organoleptic characteristics of the oil while maintaining the “smoke” notes, the temperature of the smoking process is constantly monitored and never exceeds 30/35ºC, while the room in which it is carried out is constantly kept at 15ºC.
