From stone to mill: the time of evolution
A tribute to tradition, it represents the ancient stones used to crush olives, a symbol of a technique that embodies the artisanal wisdom handed down over time.
It is precisely from those stones that a conscious evolution began: today, the pressing takes place in modern mills, where innovation does not erase the roots, but sublimates them. This is how the oil tradition meets technology, in a harmonious balance between past and future.
THE EXTRA VIRGIN OLIVE OIL IN THE BOTTLE
Tales Pietra Essenziale is an intensely fruity extra virgin olive oil, obtained from Coratina, a native cultivar par excellence known for its high content of polyphenols that guarantee a marked bitter-spicy structure. To the eye it appears clear, an intense green with golden reflections.
On the nose, there are strong notes of fresh tomato, aromatic herbs, almond and artichoke, nuanced with hints of green apple.
This complex sensory profile is supported by a present but well-balanced bitterness and a persistent spiciness. Perfect for use raw, it enhances structured and characterful dishes such as legumes, rustic soups, red meats, grilled vegetables and mature cheeses.
His robust personality is ideal for telling the strength of the Apulian land.
SENSORY PROFILE
Tales Pietra Essenziale presents an intense fruity profile (6.5/7), with a marked presence of fresh vegetal notes. The nose is dominated by cut grass (7/7) and artichoke (7/7), followed by secondary hints of aromatic herbs (6/7), almond (5/7) and tomato (5/7). The apple (3/7) is barely perceptible, while no notes of berries are detected.
When tasted, the oil confirms its structure and coherence with the olfactory intensity: bitter and spicy are both well present and balanced, with values of 6/7 and 6.5/7 respectively, confirming the high content of polyphenols typical of the Coratina cultivar. The fluidity is good (6/7), ensuring a pleasant and rounded sensation on the palate. Overall, it is an oil with character, suitable for structured gastronomic combinations and a strong identity.
